KOREAN DUMPLING HOT POT ~~ Mandu Jeongol





My family loves soups and hot pots. We have tried everything from Vietnamese Pho, Japanese Ramen, Mongolian Hot Pot, Chinese Noodle Bowl to Singaporean Laksa !!

'Mandu' is Korean Dumplings and 'Jeongol' is a type of stew or casserole in Korean Cuisine

So, recently when we saw a recipe for Korean Dumpling Hot Pot, my husband and I got inspired to try making it at home.

Thanks to our love for Asian Cuisine, we anyways have quite a few of the Asian sauces and spice pastes and vegetables at home.


Since this is a Korean Recipe, we had to improvise on a few of the ingredients that we didn't have with us. 
I will mention what ingredient we used as well as the Korean ingredient that you can buy from any Asian Grocery Store.



For this recipe, feel free to use any vegetables that you have in your fridge. 

Ingredients:
1 medium Bok Choi ( cut up into 4 inch pieces)
6 Mushrooms (sliced) 
1 cup Spring onions cut into 2 inch long pieces
1 medium Zucchini cut into half Moon slices
1 firm Tofu sliced into 1/2 inch thick slices
12 mandus (Frozen Korean dumplings....I have used an assortment of pork, chicken and lobster dumpling)

For the stock base
3 tbsp minced garlic
3 tbsp red chilli paste (you can use Gochugaru, Korean red pepper flakes)
2 tbsp fish sauce 
2 tbsp soy sauce 
1 tbsp duck sauce (you can use Maesilaek, Korean preserved Plum Extract)
5 cups chicken stock

Method:
Cut and prep all the Vegetables.
Use a large shallow pot for this recipe. Arrange all the Vegetables in the pot.
Now put the frozen dumplings into the pot. 
In a bowl, measure out all the ingredients of the stock base , except the chicken stock. Mix well. Then thin this out with 1 cup chicken stock. 
Spread this stock base all over the vegetables. And pour in the remaining chicken stock as well.


Let it cook on medium high heat till it starts bubbling. Increase the heat to high and let it boil for 5-7 minutes.



Check that the dumplings and vegetables are cooked. 

Your Dumpling Hot Pot is ready. Enjoy!
