CRISPY CHICKEN LEGS

Crispy Fried Chicken legs in under 30 minutes!

Have you ever experienced getting a request just 30 minutes before dinner time for fried chicken legs! It's difficult, but doable.. So, one busy Thursday evening, when hunger pangs strike and your taste buds call out for Crispy Fried Chicken Legs.... Follow this easy-peasy quick fix...



Crispy Fried Chicken Legs in under 30 mins ! 

Ingredients:

4 chicken legs 
Seasoning
Oil 

Method:

Clean and wash the chicken legs. Dab dry with a kitchen towel. Put slits on the chicken legs so that the spice rub soaks into the meat.  Since this is a quick-fix , we don't have time to marinate the chicken for 4-5 hours.

In a shallow frying pan, bring 5 tbsp oil to a medium heat and put the chicken legs in. Sprinkle the chicken legs with the spice mix and let it fry for 3 minutes on medium -high heat. Turn the chicken legs over and repeat the above till the legs are fried thoroughly. 




Note: I have used the ready made spice mix, but you can make your own by mixing salt, black pepper, chili flakes, oregano and garlic. 




At this time, the chicken is not cooked. You are just flash frying it. 

Switch off the stove and transfer the chicken pieces to a container which goes into your pressure cooker. Transfer all the fried spice mix from the frying pan over the chicken. This will help on adding more flavour when the chicken is cooked.




Now, using a double boiler method, pressure cooker the chicken legs on high for 2 whistles and then on low for another 7-8 minutes.  Once the pressure is released, remove the chicken pieces and fry them on medium heat till they become crispy on the outside. You can save the gravy in a separate container for future use.


Double Boiler Method - The MOST important thing to remember about pot-in-pot cooking is to add water to the cooking pot BEFORE lowering in the pan! Pressure cookers need steam to cook—the water added to the bottom of the pressure cooking pot is the key to creating this steam! I like to add the water to the pressure cooking pot first thing so that I don’t accidentally forget this step once the pot-in-pot is in place.



Sprinkle on some parsley/cilantro for garnish. You can also squeeze a few drops of lemon on the chicken.



A crunchy bowl of garden salad will be an amazing accompaniment! Enjoy !!
