We love our eggs ! An extremely healthy way to kick-start the day!
This morning, I woke up earlier than usual and thought of making something different and surprising my little one!
‘Frittata is an egg-based Italian dish similar to an omelette or crustless quiche, enriched with additional ingredients such as meats, cheeses, vegetables or pasta’ ~~ Sourced from Wikipedia.
I made mini-Frittatas with eggs, potatoes and salami! Which turned out .. ohh so yummy ! Frittatas are amazingly easy to make and make for a delicious breakfast!
EGG N' SALAMI FRITTATAS |
Usually, the
Frittata mixture is put in an oiled baking dish and baked in the oven.
But I made
use of my mini-Uttappa maker and my mini-Appam maker. Both these are easily
available in any utensil shop and have a varied use! I use them for omelets’, pancakes,
dosas as well as mini-Pizza’s !!
And my 5
year old son loves it! It fits comfortably into his tiny hands and looks
amazingly appetizing to eat!
Lets start
cooking !!
Ingredients:
4 eggs
2 large
potatoes
12 slices of
salami
½ tsp chili
powder
1 tsp
turmeric powder
1.5 tsp
coriander powder
½ tsp freshly
crushed black pepper
Salt to
taste
Olive oil as
required
Method:
In a mixing
bowl, grate up the potatoes and break the eggs into it.
Add all the spices and salt to this. Mix well.
Chop up the
salami slices nice and fine.
Fold the
salami into the egg gently.
Now, brush
on some oil into any non-stick pan of your choice. I have
used the mini-Uttapam pan and the mini- Appam Pan.
Bring the heat
down to medium-low.
Put spoonful’s
of the mixture onto the pans.
When the
bottom is done, the mini-frittatas should leave the sides of the pans. Usually that
will take around 3-4 minutes.
Once the
bottom is done, turn the mini-frittatas over and let it brown evenly.
Remove the
mini-frittatas and serve immediately.
I served the
mini-frittatas with some tomato sauce, mustard sauce and some mint yogurt and
some fresh orange juice on the side
