RATATOUILLE - CLASSIC FRENCH STEW

Today's special is RATATOUILLE!

Ratatouille is a classic French stew that’s fun to say (rat-tuh-TOO-ee) and fun to make ๐Ÿ˜ and just as fun to eat.... Yum yum ๐Ÿ˜‹๐Ÿ˜‹
It’s packed with fresh produce: tomatoes, eggplant, zucchini and yellow squash, bell pepper, onions and cilantro.

For my husband, weekends have always been for relaxing, spending time with family, playing basketball and above all..........

KOREAN MAYAK EGGS ~~ Marinated Eggs

Today, I am going to share the recipe of Mayak Eggs. This is a Korean dish which is basically soft-boiled eggs marinated in a flavoursome soy broth..
My interest in Korean Cuisine is increasing๐Ÿ˜ƒ  I am loving the spicy, sweet and salty flavors that Korean dishes have to offer.

Mayak eggs can be best enjoyed with warm Jasmine rice. It can be eaten cold or at room temperature. These eggs will stay for 3-4 days under refrigeration.

PAN FRIED FISH FILLET WITH LEMON GARLIC BUTTER SAUCE AND HARISSA SPICED COUSCOUS

My husband and I love cooking ! Fridays and Saturday dinners for us is a time to make something out of the ordinary. Off late, our 5 year old has been repeatedly asking for fish… specifically fish without thorns, so that he can eat it all by himself.

So as we were wondering what to cook for dinner tonight, we decided on pan-fried fillets of fish which take less than 12 minutes to prepare and cook. We added in some steamed vegetables, mashed potatoes with some Harissa Spiced Couscous and VOILA!! A tasty (and healthy) dinner is all ready!

CLARIFIED BUTTER (GHEE)

Ghee is used a lot in Indian cuisine be it north, south, east or west. It plays an important role in festivals, weddings and so on. Ghee is also used in place of oil to light lamps on auspicious days. It imparts a special aroma and taste to any dish and a little goes a long way.
