EASTER SPECIAL - ROASTED TURKEY



This Easter, we made a Roasted Turkey. This is a super simple recipe, although it is time consuming.
Prep time is around 3 Hours and cooking time is 3.5 hours. So, I marinated the Turkey early morning and then put it in the oven to bake around mid-morning.

So, it was all set for Easter Dinner !





Here goes the recipe:

Ingredients:

12 lbs Whole Turkey
16 Oz Chicken Stock

For the Turkey Rub:
200 gms salted Butter
3 tbsp salt
1 tsp cumin powder
3 tbsp ground black pepper
1.5 tsp Lemon and Pepper Seasoning
2 tsp Old Bay Seasoning
2 tsp Garlic Powder
1 tsp Rosemary
Juice of 3 lemons

For the stuffing:
2 onions - diced
1 cup diced Carrots
1 cup Diced Celery
8 cloves of Garlic - chopped
salt and pepper to taste

Method:

Wash and rinse the Turkey. Pat dry properly with a kitchen towel.


Prep all the ingredients.






Next, put the stuffing in the Turkey.  This step is optional. You can also just put the chopped veggies in the baking tray. Both methods yield awesome taste.






Generously apply the rub onto the turkey - outside and inside. Put it in a roasting tray. Put the Chicken stock in the tray.



Cover with aluminium foil and keep aside to marinate for 2.5 hours.

Preheat the oven to 350F. Bake the Turkey for 3.5 Hours.  Take the turkey out and baste it with the chicken stock. Do this every 45 minutes.  Keep the Turkey covered with aluminium foil, so that the top of the Turkey does not get too browned.



After the Turkey is baked, let it rest for 30 minutes before carving.
