GOAN PRAWNS PUMPKIN CURRY

Have you ever had those days when you want to cook something tasty, but in a jiffy as well, without too much effort !

I had one of those days and thought of making a one-pot meal which satisfied my taste buds and did not take up too much of my time as well ! ( much required in the horrid summers of Delhi!! )

This Goan Prawns Pumpkin Curry literally took less than an hour to prep and cook!

Enjoy the delicious coconutty delight!

GOAN PRAWNS PUMPKIN CURRY




Ingredients:

500 gms yellow Pumpkin (Kadu) (chopped)
300 gms deveined Prawns
2 large onions (chopped)
2 green chillies (chopped)
1 cup grated coconut
200 ml coconut milk
1 tsp cumin seeds
½ tsp chilli powder
1 tsp turmeric powder
1 tsp garam masala
Handful of curry leaves
Salt to taste
500 ml water

Method:

Combine the pumpkin, onions and chillies in a deep vessel.


Marinate the prawns with turmeric powder, chilli powder and salt.  Keep aside.


Mix the masalas to the pumpkin mixture.  Mix well. Add salt to taste.




Add 200 ml water to this and bring to a boil.



Add the grated coconut and mix well.





Now add the curry leaves . Mix well.



Add the prawns. Mix well and bring to a boil.  Let it cook for 3 minutes.



Now , add the coconut milk and simmer till the prawns and pumpkin are completely cooked.




Enjoy this coconutty flavored pumpkin-prawns curry with steamed rice!
