BOWTIE PASTA IN CHICKEN MEATBALL GRAVY

This is an amazing comfort food that tastes nice anytime of the year!

Pasta is something that is usually cooked on a weekend, mostly by my husband, so I get a break from cooking on the weekends… sweet…ain’t it .....

So, 1 day, I decided to surprise the 2 men in my life (my hubby and my 5 year old cutie) with a scrumptious meal of Chicken Meatballs with Bowtie Pasta. They loved it so much that an instant demand came from my son to make it again the next day!

You can make meatballs at home from chicken mince.  I have used  Frozen Meatballs since this was a last minute decision.

Here is the recipe.  

Ingredients:

1 cup Bowtie Pasta
10-12 Chicken Meatballs
2 onions (chopped up into chunks)
1 capsicum (chopped up into chunks)
2 green chilies (finely chopped)
4 garlic cloves (minced)
4 – 5 green olives
150 ml tomato puree
2 tbsp Stir-Fry Sauce
2 tsp Worcestershire Sauce
1 tsp Lemon Grass Wok Sauce
2 tbsp Olive Oil

Method:

Prep all the Ingredients.




In a microwavable container, cook the meatballs for 10 minutes till they are tender. Keep aside. Retain the water for use later on.


Cook the Bowtie Pasta as per the instructions. Keep aside.


**TIP: Contrary to popular belief, do not put oil on the pasta when it is resting since this increases the stickiness of the pasta. Just fluff and keep it aside. Fluff it again to avoid clumping together.**

In a wok, heat 2 tbsp olive oil, add the minced garlic and green chilies. Saute for 2 minutes.


Add the onions and capsicum. Saute for a minute.


Add the Stir Fry sauce and Lemon Grass Wok Sauce and sauté on high for 2 minutes, constantly stirring.


Add the tomato puree.


Add 1 cup water (you can use the water in which the meatballs were cooked)


Bring to a boil and add the Meatballs.


Add the Worcestershire Sauce and let it simmer for 2 minutes.



Add the Cooked Pasta and the olives.

Serve Immediately.
